I believe you learn about a restaurant when it serves bread - if they do the freebie well, the rest of the meal will be fine. At a Mexican place, the equivalent is the chips and salsa, which I ate way too many of because they were outstanding. (I assume the extra crunch was extra oil, so watch for gross weight gains on takeoff from the airport...) I had a mole that was obviously house made.
